Moscow Hospital Food Supplier Deploys AI to Keep Meals Safe

A Moscow company that prepares meals for city hospital patients has rolled out an artificial intelligence system to monitor food safety around the clock, according to Deputy Mayor Maxim Liksutov. The system uses machine vision to check whether workers are wearing gloves, hairnets, and following proper hand-washing procedures, instantly flagging any violations.

The firm, Lois-Box, produces tens of thousands of ready meals each day for state hospitals. With that scale, traditional spot checks miss too much. So the company turned to a pilot program with machine vision: cameras feed live video to an AI that scans for missing protective gear, stray objects, or broken workflow rules. Alerts fire in under a second, giving staff time to fix problems before meals leave the factory floor.

Liksutov noted that the city backs high-tech manufacturing under Mayor Sergei Sobyanin’s orders, offering over 20 support measures including tax breaks and loan subsidies. The developer, Moscow-based IT Imperial, designed the system around Russian safety standards. Deputy CEO Anna Baghdasaryan stressed the goal isn’t to replace quality inspectors but to free them from repetitive tasks. The company plans to bring the same technology to other food plants across the capital.
